Alex and I have been getting into making different kinds of lattes, and I thought recipes might make a nice addition to the Inner Circle! Ingredients:
For this recipe, you'll need on hand:
- A can of Pumpkin Puree (make sure it's 100% pumpkin!)
- Granulated sugar
- Salt
- Your milk of choice. We use Oat Milk, but it's just your personal preference! If you want to get really decadent, you can even use condensed milk...
- Spices: cinnamon, nutmeg (freshly ground is always better), cloves, juniper berries, and any other spices you want to throw in there. If you have tea bags or a strainer, feel free to include whole cloves, a cinnamon stick, and juniper berries. If not, stick with ground spices only.
This recipe is quite scalable (everything is in equal parts), so it's up to you which size cup measure you want to use. I usually use a 2/3-cup measure, and the finished Pumpkin Spice "sauce" fills a mason jar. But if you'd like to make more at one time, go ahead and use a full 1-cup.
Instructions:

1. First, we're going to make the simple syrup. Add 2/3 cup of sugar and 2/3 cup of water to a small saucepan, along with the spices you want to incorporate. I usually include a few shakes of ground cinnamon, a cinnamon stick, a few whole cloves, a few grinds of whole nutmeg (don't be shy!) and a few Juniper berries.
2. Heat the mixture, uncovered, on medium heat until it starts to boil. Mix regularly to ensure the sugar doesn't burn. Reduce the heat to low, and simmer for about another 10 minutes. I usually simmer it until it has halved in volume. The sugar should be completely incorporated, and the syrup should be noticeably thicker.
3. Once you cook your syrup, pass it through a strainer to remove your whole spices. Pour it back in the saucepan, and add 2/3 cup of pumpkin puree, a dash of salt, and 2/3 cup of your choice of milk.
4. Heat on low for 5 minutes or so, mixing regularly.
5. Once your Pumpkin Spice sauce is mixed and tasting delicious, pour it into a jar, cover, and cool in the fridge.
Now that you have your sauce, you can add it to your latte (or coffee drink of choice). The best course of action is to add 3-5 tablespoons (depending on your latte size) to your milk before steaming or frothing. Make sure to shake the jar before adding to your drink, just in case anything has separated. You can even try simply adding this mixture straight to your cold brew, or iced coffee! It has so many uses, and I can't wait to hear what you all use it for!
